For the Apple Cake:
- 2½ cups all-purpose flour
- 2 cups diced apples
- 1½ cups granulated sugar
- 3 large eggs
- 1 cup vegetable oil
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- ½ teaspoon salt
For the Cheesecake Layer:
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
For the Caramel Topping:
- 1 cup caramel sauce
- ½ cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9-inch springform pan.
- Mix flour, sugar, cinnamon, baking soda, and salt. Fold in apples. In another bowl, whisk eggs and oil, then combine with dry ingredients.
- For cheesecake layer, beat cream cheese until smooth, add sugar, eggs, and vanilla. Mix until well combined.
- Pour 2/3 of apple cake batter into pan, spread cheesecake mixture over it, then top with remaining cake batter.
- Bake for 75 minutes or until a toothpick comes out clean. Cool completely.
- Drizzle with caramel sauce and sprinkle with pecans before serving.
