Ingredients

  • Graham cracker crumbs
  • Unsalted butter
  • Granulated sugar
  • Cream cheese
  • Sour cream
  • Vanilla extract
  • Fresh raspberries
  • Powdered sugar
  • Eggs

Instructions

  1. Preheat the oven to 325°F (160°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Press into the bottom of the baking dish.
  3. Bake for 10 minutes until golden, then allow to cool.
  4. In another bowl, beat cream cheese and sour cream until smooth. Gradually add sugar, vanilla, and eggs while mixing until fully combined.
  5. Gently fold in fresh raspberries, then pour this mixture over the cooled crust.
  6. Bake for 30-35 minutes or until set but slightly jiggly in the center. Cool completely at room temperature before refrigerating for at least 3 hours.
  7. Lift out using parchment paper and slice into bars.
