- 3 pounds Yukon Gold potatoes, peeled and quartered
- 2 large yellow onions, thinly sliced
- 4 tablespoons butter, divided
- 1 cup whole milk, warmed
- 1 cup Gruyere cheese, grated
- 2 cloves garlic, minced
- 2 sprigs fresh thyme
- Salt and black pepper to taste
Instructions
- Caramelize onions in 2 tablespoons butter over medium-low heat until golden brown and jammy, about 25-30 minutes.
- Meanwhile, boil potatoes in salted water until tender, about 20 minutes. Drain well.
- Mash potatoes with remaining butter and warm milk until smooth. Fold in caramelized onions, Gruyere, garlic, and thyme leaves. Season to taste.

- For extra smoothness, pass potatoes through a ricer before adding other ingredients
