Description

  • 3 pounds Yukon Gold potatoes, peeled and quartered
  • 2 large yellow onions, thinly sliced
  • 4 tablespoons butter, divided
  • 1 cup whole milk, warmed
  • 1 cup Gruyere cheese, grated
  • 2 cloves garlic, minced
  • 2 sprigs fresh thyme
  • Salt and black pepper to taste

Instructions

  • Caramelize onions in 2 tablespoons butter over medium-low heat until golden brown and jammy, about 25-30 minutes.
  • Meanwhile, boil potatoes in salted water until tender, about 20 minutes. Drain well.
  • Mash potatoes with remaining butter and warm milk until smooth. Fold in caramelized onions, Gruyere, garlic, and thyme leaves. Season to taste.

Notes

  • For extra smoothness, pass potatoes through a ricer before adding other ingredients
