- 1 lb ground beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese (plus more for topping)
- ½ tsp salt
- ½ tsp black pepper
- 1 bag (32 oz) frozen tater tots
- Optional garnish: chopped parsley or green onions
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook Ground Beef: In a skillet over medium heat, cook ground beef and onion until beef is browned. Drain excess fat and stir in garlic, cooking for 1 more minute.
- Mix Filling: In a large bowl, combine the cooked beef, cream of mushroom soup, sour cream, cheddar cheese, salt, and pepper. Mix well.
- Assemble Casserole: Spread the beef mixture evenly in the prepared baking dish. Arrange frozen tater tots on top in a single layer. Sprinkle with additional cheddar cheese if desired.
- Bake: Bake uncovered for 35-40 minutes, or until the tater tots are golden brown and crispy.
- Serve: Garnish with parsley or green onions if desired. Serve hot with a side salad or steamed veggies.

- For extra flavor, mix in a cup of frozen peas, corn, or green beans with the beef mixture.
- Substitute cream of mushroom soup with cream of chicken or cheddar soup if preferred.
