A comforting and flavorful weeknight dinner that combines tender chicken, al dente pasta, and Italian seasonings, all cooked in one pot for minimal cleanup and maximum flavor.

- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 pound penne pasta
- 4 cups chicken broth
- 2 cups marinara sauce
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 2 tablespoons Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat. Season chicken with salt, pepper, and 1 tablespoon Italian seasoning. Cook until golden, about 5-6 minutes.
- Add garlic and cook for 1 minute until fragrant. Add pasta, broth, marinara sauce, and remaining Italian seasoning. Bring to a boil, then reduce heat and simmer covered for 12-15 minutes, stirring occasionally.
- Once pasta is almost tender, stir in heavy cream and spinach. Cook for 2-3 minutes until spinach wilts and sauce thickens. Remove from heat and stir in Parmesan cheese.
Notes
- Use any short pasta shape you prefer
- For a lighter version, substitute half-and-half for heavy cream
- Leftovers keep well refrigerated for up to 3 days
