A comforting and flavorful weeknight dinner that combines tender chicken, al dente pasta, and Italian seasonings, all cooked in one pot for minimal cleanup and maximum flavor.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 pound penne pasta
  • 4 cups chicken broth
  • 2 cups marinara sauce
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Heat olive oil in a large pot over medium-high heat. Season chicken with salt, pepper, and 1 tablespoon Italian seasoning. Cook until golden, about 5-6 minutes.
  • Add garlic and cook for 1 minute until fragrant. Add pasta, broth, marinara sauce, and remaining Italian seasoning. Bring to a boil, then reduce heat and simmer covered for 12-15 minutes, stirring occasionally.
  • Once pasta is almost tender, stir in heavy cream and spinach. Cook for 2-3 minutes until spinach wilts and sauce thickens. Remove from heat and stir in Parmesan cheese.

Notes

  • Use any short pasta shape you prefer
  • For a lighter version, substitute half-and-half for heavy cream
