Description
This easy One Pot Chicken Parmesan Pasta is a comforting dish that combines juicy chicken, tender pasta, and rich marinara sauce, all cooked together in a single pot for minimal cleanup. Perfect for a busy weeknight meal!
Ingredients
Scale
- 2 chicken breasts, cubed
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 2 cups marinara sauce
- 2 cups chicken broth
- 8 oz pasta (penne or rigatoni)
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add the cubed chicken, garlic, Italian seasoning, and red pepper flakes (if using). Cook until the chicken is browned and cooked through, about 7-8 minutes. Season with salt and pepper.
- Pour in marinara sauce, chicken broth, and pasta. Stir to combine, ensuring the pasta is submerged in the liquid.
- Bring to a simmer, cover, and cook for 10-12 minutes, or until the pasta is tender and the liquid is mostly absorbed.
- Stir in Parmesan and mozzarella cheese until melted and creamy. Serve hot with extra Parmesan, if desired.
Notes
- Feel free to use any pasta shape you like, but shorter types (like penne or rotini) work best.
- For a lighter version, you can swap the regular pasta with whole wheat or gluten-free pasta.
