- 1 cinnamon stick
- 2 cups chicken broth or water

Instructions
- Rinse basmati rice under cold water until the water runs clear to remove excess starch.
- In a large pot, heat olive oil over medium heat. Sauté the chopped onion until translucent.
- Add minced garlic and the cinnamon stick; cook for about one minute until fragrant.
- Stir in the rinsed rice, then add chicken broth (or water), along with salt and pepper. Bring to a gentle boil.
- Cover tightly and reduce heat to low. Simmer for 15-20 minutes until liquid is absorbed.
- Toast pine nuts in a dry skillet until golden brown; mix into the cooked rice before serving.
