Instructions
- Preheat oven to 400°F (200°C). Slice the baguette into 1/2-inch pieces and place on a baking sheet. Brush lightly with olive oil and toast until golden brown, about 10 minutes.
- In a bowl, mix cranberries, pomegranate seeds, chopped mint leaves, honey, lemon juice, salt, and pepper until well combined.
- Generously spoon the mixture onto the toasted baguette slices. Drizzle with additional olive oil before serving.
