- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1½ cups fresh blueberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F. Grease a 9×5-inch loaf pan and line with parchment paper.
- Mix cream cheese with powdered sugar until smooth; set aside.
- Combine flour, sugar, baking powder, and salt in a large bowl.
- Whisk eggs, milk, oil, and vanilla in another bowl. Fold into dry ingredients until just combined.
- Gently fold in blueberries. Pour half the batter into prepared pan.
- Drop spoonfuls of cream cheese mixture over batter. Add remaining batter and swirl with a knife.
- Bake 60-65 minutes until a toothpick comes out clean.
Notes
- Toss blueberries in flour to prevent sinking
- Don’t overmix the batter
- Store in refrigerator up to 5 days
