- 4 large whole wheat tortillas
- 1 cup hummus (classic or flavored)
- 2 cups mixed salad greens
- 1 cucumber, thinly sliced
- 1 red bell pepper, julienned
- 1 carrot, grated
- 1 avocado, sliced
- 1/4 cup red onion, thinly sliced
Instructions
- Spread about 1/4 cup hummus evenly on each tortilla, leaving a small border around the edges
- Layer each tortilla with salad greens, cucumber, bell pepper, carrot, avocado, and red onion
- Fold in the sides of the tortilla and roll tightly from bottom to top
- Cut diagonally and serve immediately
