Ingredients

  • 4 large whole wheat tortillas
  • 1 cup hummus (classic or flavored)
  • 2 cups mixed salad greens
  • 1 cucumber, thinly sliced
  • 1 red bell pepper, julienned
  • 1 carrot, grated
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced

Instructions

  • Spread about 1/4 cup hummus evenly on each tortilla, leaving a small border around the edges
  • Layer each tortilla with salad greens, cucumber, bell pepper, carrot, avocado, and red onion
  • Fold in the sides of the tortilla and roll tightly from bottom to top
  • Cut diagonally and serve immediately
