Ingredients
- Oven-ready lasagna noodles
- Whole milk ricotta cheese
- Fresh or frozen spinach
- Shredded mozzarella cheese
- Grated parmesan cheese
- Eggs
- Dried oregano
- Salt and pepper
- Fresh basil leaves
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C) and lightly coat a 9×13-inch baking dish with olive oil.
- Boil salted water in a large pot, cook lasagna noodles until al dente, drain, and lay flat.
- In a bowl, mix ricotta, squeezed-dry spinach, eggs, half of the mozzarella, oregano, salt, and pepper until blended.
- Spread a thin layer of the spinach mixture in the baking dish, layer three noodles over it, and repeat this process until ingredients are exhausted.
- Top the final noodle layer with the remaining spinach mixture and sprinkle with the rest of the mozzarella and parmesan.
- Cover with foil and bake for 25 minutes; remove foil during the last 10 minutes to brown the cheese.
- Let cool for 10 minutes before slicing; garnish with fresh basil.
