Ingredients

  • Oven-ready lasagna noodles
  • Whole milk ricotta cheese
  • Fresh or frozen spinach
  • Shredded mozzarella cheese
  • Grated parmesan cheese
  • Eggs
  • Dried oregano
  • Salt and pepper
  • Fresh basil leaves
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly coat a 9×13-inch baking dish with olive oil.
  2. Boil salted water in a large pot, cook lasagna noodles until al dente, drain, and lay flat.
  3. In a bowl, mix ricotta, squeezed-dry spinach, eggs, half of the mozzarella, oregano, salt, and pepper until blended.
  4. Spread a thin layer of the spinach mixture in the baking dish, layer three noodles over it, and repeat this process until ingredients are exhausted.
  5. Top the final noodle layer with the remaining spinach mixture and sprinkle with the rest of the mozzarella and parmesan.
  6. Cover with foil and bake for 25 minutes; remove foil during the last 10 minutes to brown the cheese.
  7. Let cool for 10 minutes before slicing; garnish with fresh basil.
