Ingredients

  • 1 pound penne pasta
  • 1 pound Italian sausage, casings removed
  • 1 large bunch kale, stems removed and chopped
  • 4 cloves garlic, minced
  • 1/2 cup white wine (or chicken broth)
  • 1/3 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • Red pepper flakes to taste
  • Salt and black pepper

Instructions

  1. Cook pasta according to package directions; reserve 1 cup pasta water.
  2. Brown sausage in a large skillet over medium heat, breaking into chunks.
  3. Add garlic and red pepper flakes, cook for 1 minute.
  4. Add kale and wine, cook until kale wilts and wine reduces (5-7 minutes).
  5. Toss with pasta, olive oil, and Parmesan. Add pasta water if needed.

Notes

  • Use spicy or sweet Italian sausage based on preference
  • Swiss chard or spinach can substitute for kale
  • Pasta water helps create a silky sauce
  • Leftovers keep well for 3 days refrigerated
