- 1 pound penne pasta
- 1 pound Italian sausage, casings removed
- 1 large bunch kale, stems removed and chopped
- 4 cloves garlic, minced
- 1/2 cup white wine (or chicken broth)
- 1/3 cup olive oil
- 1/2 cup grated Parmesan cheese
- Red pepper flakes to taste
- Salt and black pepper
Instructions
- Cook pasta according to package directions; reserve 1 cup pasta water.
- Brown sausage in a large skillet over medium heat, breaking into chunks.
- Add garlic and red pepper flakes, cook for 1 minute.
- Add kale and wine, cook until kale wilts and wine reduces (5-7 minutes).
- Toss with pasta, olive oil, and Parmesan. Add pasta water if needed.
