Instructions
- Preheat and Prep:
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
- Mix Dry Ingredients:

- Mix Wet Ingredients:
- In another bowl, beat eggs, then mix in oil, applesauce, and vanilla.
- Combine Ingredients:
- Gradually add the wet mixture to the dry ingredients, stirring until just combined.
- Fold in carrots, apple, coconut, raisins, and nuts.
- Bake the Muffins:
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
