Ingredients

- 1 cup green or brown lentils
- 1 cup cherry tomatoes, halved
- ½ cucumber, diced
- ½ red onion, finely chopped
- ¼ cup fresh herbs (parsley or cilantro), chopped
- 3 tablespoons freshly squeezed lemon juice
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water until clear. In a pot, combine with 3 cups of water and bring to a boil. Reduce heat and simmer uncovered for 20-25 minutes until tender but not mushy.
- While the lentils are cooking, chop the cherry tomatoes and cucumber, and finely dice the red onion.
- In a large bowl, combine cooked lentils (drained) with chopped tomatoes, cucumber, onion, and fresh herbs. Toss gently to combine.
- Drizzle with lemon juice and olive oil, then season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
