Ingredients

  • 1 cup green or brown lentils
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ½ red onion, finely chopped
  • ¼ cup fresh herbs (parsley or cilantro), chopped
  • 3 tablespoons freshly squeezed lemon juice
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water until clear. In a pot, combine with 3 cups of water and bring to a boil. Reduce heat and simmer uncovered for 20-25 minutes until tender but not mushy.
  2. While the lentils are cooking, chop the cherry tomatoes and cucumber, and finely dice the red onion.
  3. In a large bowl, combine cooked lentils (drained) with chopped tomatoes, cucumber, onion, and fresh herbs. Toss gently to combine.
  4. Drizzle with lemon juice and olive oil, then season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving.
