- 3–4 boneless, skinless chicken breasts
- 1 ripe mango, diced
- 1 cup fresh pineapple, diced
- Juice of 2 limes
- 2 tablespoons honey
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro (optional)
Instructions
- In a bowl, whisk together lime juice, honey, garlic powder, salt, and pepper to create the marinade.
- Add diced mango and pineapple to the marinade; gently mix to coat.
- Place chicken in a resealable bag or bowl and pour half of the marinade over it; marinate for at least 30 minutes.
- Preheat grill to medium-high heat (375°F/190°C).
- Grill chicken for 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C).
- In the last few minutes, add the marinated fruit directly onto the grill until caramelized.
- Let the chicken rest for five minutes before slicing; drizzle with remaining marinade and garnish with cilantro if desired.
