Instructions
- Preheat oven to 300°F (150°C). Season the chuck roast with salt and pepper.
- In a large Dutch oven, heat olive oil over medium-high heat. Brown the roast on all sides (about 3-4 minutes per side) and then remove from the pot.
- Sauté sliced onions and minced garlic in the same pot until golden (5-7 minutes).
- Deglaze with Worcestershire sauce and balsamic vinegar, scraping up brown bits from the bottom. Return the roast to the pot.
- Add beef broth until the meat is nearly submerged, then toss in thyme and bay leaves. Cover tightly with a lid or foil.
- Bake in the preheated oven for about 3 hours or until fork-tender. Let rest for 15 minutes before slicing against the grain. Serve hot with caramelized onions on top.
