- 1 pound linguine pasta
- 2 large chicken breasts, sliced
- 4 tablespoons cowboy butter (garlic, herbs, red pepper flakes, and butter blend)
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- ½ cup fresh parsley, chopped
- ¼ cup fresh lemon juice
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook linguine according to package directions. Reserve 1 cup pasta water.
- Season chicken with salt and pepper. Cook in cowboy butter mixture until golden, about 6-8 minutes.
- Add garlic and tomatoes, cook for 2 minutes until fragrant.
- Toss cooked pasta with chicken mixture, adding pasta water as needed for desired consistency.
- Finish with parsley, lemon juice, and Parmesan cheese.
Notes
- Make ahead: Prepare cowboy butter up to 3 days in advance
- For extra kick, add more red pepper flakes
- Can substitute linguine with any pasta of choice
