  • 8 oz full-fat cream cheese (softened)
  • 2 large eggs
  • 2 cups mixed berries (fresh or frozen)

  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
  2. In a bowl, mix oats, brown sugar, melted butter, baking powder, and salt until crumbly. Press two-thirds of the mixture into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese until smooth. Gradually add eggs, mixing in vanilla and salt until creamy.
  4. Fold in berries and pour over the oat crust evenly. Sprinkle remaining oat mixture on top.
  5. Bake for 30-35 minutes until set but slightly jiggly in the center. Cool completely before slicing into squares.
