- 1 large egg

Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and brown sugar until fluffy.
- Add the mashed banana, egg, and vanilla extract. Mix until smooth.
- In a separate bowl, whisk together flour, oats, baking soda, cinnamon, and salt.
- Gradually stir the dry ingredients into the wet ingredients until well combined. Optionally, fold in chocolate chips or walnuts.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until golden brown around the edges.
- Let the cookies cool on the sheet for a few minutes before transferring to a wire rack.

- For a softer texture, use more mashed banana or a bit of extra butter.
