- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter (melted)
- 1 cup granulated sugar
- 16 oz cream cheese (softened)
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 1 cup semi-sweet chocolate chips (melted)
- 1 cup mini marshmallows
- ¼ cup unsweetened cocoa powder
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan.
- Bake for 10 minutes until golden brown. Let cool completely on a wire rack.
- In a large bowl, beat softened cream cheese until smooth. Gradually add powdered sugar and cocoa powder until combined.
- In another bowl, whip heavy cream until stiff peaks form and fold into the cream cheese mixture.
- Stir melted chocolate chips into the filling and gently fold in mini marshmallows.
- Pour filling onto cooled crust and smooth the top. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Before serving, toast additional mini marshmallows until golden brown.
