  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 2 medium zucchinis, spiralized
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese

  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 1 tsp Italian seasoning

Instructions

  1. Prepare zucchini noodles using a spiralizer and set aside.
  2. Heat olive oil in a skillet over medium heat. Cook seasoned chicken breasts for 6-7 minutes per side until golden brown and cooked through. Remove and slice.
  3. In the same skillet, sauté minced garlic until fragrant (about 1 minute).
  4. Pour in heavy cream, stirring continuously until slightly thickened (3-4 minutes). Add Parmesan cheese until melted and creamy.
  5. Toss in zucchini noodles and sliced chicken; gently combine for 2-3 minutes until warmed through.
  6. Season with salt, pepper, and Italian seasoning. Serve immediately with extra Parmesan if desired.
