- 1 pound potato gnocchi
- 8 ounces mushrooms, sliced
- 6 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/4 teaspoon nutmeg
- Salt and black pepper to taste
Instructions
- Cook gnocchi according to package directions; reserve 1/2 cup pasta water.
- Sauté mushrooms in butter and oil until golden brown (5-6 minutes).
- Add garlic, cook for 1 minute until fragrant.
- Pour in cream, add nutmeg, simmer until slightly thickened.
- Add spinach and cook until wilted.
- Toss with gnocchi and Parmesan, adding pasta water if needed.
Notes
- Fresh or packaged gnocchi both work well
- Any mushroom variety can be used
- For a lighter version, substitute half-and-half for cream
- Garnish with extra Parmesan and black pepper
