Ingredients

  • 1 pound potato gnocchi
  • 8 ounces mushrooms, sliced
  • 6 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/4 teaspoon nutmeg
  • Salt and black pepper to taste

Instructions

  • Cook gnocchi according to package directions; reserve 1/2 cup pasta water.
  • Sauté mushrooms in butter and oil until golden brown (5-6 minutes).
  • Add garlic, cook for 1 minute until fragrant.
  • Pour in cream, add nutmeg, simmer until slightly thickened.
  • Add spinach and cook until wilted.
  • Toss with gnocchi and Parmesan, adding pasta water if needed.

Notes

  • Fresh or packaged gnocchi both work well
  • Any mushroom variety can be used
  • For a lighter version, substitute half-and-half for cream
  • Garnish with extra Parmesan and black pepper
