Instructions
- Preheat the oven to 400°F (200°C).
- Wash and poke holes in the potatoes. Bake directly on the rack for 45-60 minutes until tender.
- Cook chicken in a skillet over medium heat until no longer pink, about 7-10 minutes per side. Shred with two forks.
- In a bowl, combine shredded chicken, cream cheese, ranch seasoning mix, half of the cheddar cheese, and bacon bits if using.
- Slice baked potatoes open and fluff the insides with a fork. Fill each potato with the chicken mixture.
