  • 1 onion, thinly sliced

  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Sour cream and salsa (for serving)

Instructions

  • Season the Chicken: In a bowl, toss the chicken with chili powder, paprika, cumin, salt, and pepper.
  • Cook the Chicken: Heat olive oil in a pan over medium heat. Add the chicken and cook for 5-7 minutes until browned and cooked through. Remove and set aside.
  • Sauté Veggies: In the same pan, sauté bell peppers and onions until soft, about 3-4 minutes.
  • Assemble the Quesadilla: Place one tortilla on a hot skillet. Add a layer of cheese, cooked chicken, sautéed veggies, and another layer of cheese. Top with the second tortilla.
  • Cook the Quesadilla: Cook on medium heat for 3-4 minutes per side until golden brown and the cheese is melted. Remove from heat and slice into wedges.
  • Serve: Serve hot with sour cream and salsa.
