- 1 bell pepper, thinly sliced
- 1 onion, thinly sliced

- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin

- 2 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Sour cream and salsa (for serving)
Instructions
- Season the Chicken: In a bowl, toss the chicken with chili powder, paprika, cumin, salt, and pepper.
- Cook the Chicken: Heat olive oil in a pan over medium heat. Add the chicken and cook for 5-7 minutes until browned and cooked through. Remove and set aside.
- Sauté Veggies: In the same pan, sauté bell peppers and onions until soft, about 3-4 minutes.
- Assemble the Quesadilla: Place one tortilla on a hot skillet. Add a layer of cheese, cooked chicken, sautéed veggies, and another layer of cheese. Top with the second tortilla.
- Cook the Quesadilla: Cook on medium heat for 3-4 minutes per side until golden brown and the cheese is melted. Remove from heat and slice into wedges.
- Serve: Serve hot with sour cream and salsa.

- For extra heat, add sliced jalapeños to the filling.
