- 6 medium potatoes, peeled and diced
- 1 large onion, finely chopped
- 3 cups chicken broth
- 2 cups whole milk
- 2 cups shredded cheddar cheese
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- Optional: bacon bits and green onions for garnish
Instructions
- Melt butter in a large pot over medium heat. Add onions and cook until softened, about 5 minutes.
- Stir in flour and cook for 1 minute to create a roux.
- Gradually add chicken broth and milk, stirring constantly to prevent lumps.
- Add diced potatoes, bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Add cheese and stir until melted. Season with salt and pepper.
Notes
- For extra creaminess, use heavy cream in place of some of the milk
- Can be stored in refrigerator for up to 3 days
- Freeze without dairy and add when reheating for best results
