Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 large onion, finely chopped
  • 3 cups chicken broth
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste
  • Optional: bacon bits and green onions for garnish

Instructions

  1. Melt butter in a large pot over medium heat. Add onions and cook until softened, about 5 minutes.
  2. Stir in flour and cook for 1 minute to create a roux.
  3. Gradually add chicken broth and milk, stirring constantly to prevent lumps.
  4. Add diced potatoes, bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  5. Add cheese and stir until melted. Season with salt and pepper.

Notes

  • For extra creaminess, use heavy cream in place of some of the milk
