- 2 cups water

- 2 tbsp olive oil
- Salt and pepper to taste

Instructions
- Cook the sausage: Heat olive oil in a large pot over medium heat. Add the sausage, breaking it into pieces, and cook until browned. Remove and set aside.
- Sauté aromatics: In the same pot, add onion and garlic. Sauté until fragrant and softened, about 3 minutes.
- Simmer the potatoes: Add chicken broth, water, and sliced potatoes. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Add kale and cream: Stir in the cooked sausage, kale, and heavy cream. Simmer for 5 minutes until the kale wilts and the soup is heated through.
